5oz Unsalted Butter (or margarine)

5oz Caster Sugar

6oz SR flour

3 Eggs

1tsp Vanilla Extract

 A dash of food colouring if required.

· Beat everything together in a mixer or food processor

· Fill each muffin case about 2/3

· Bake at approx 160 until well risen.

· Cool on a cooling tray and ice with buttercream.
