Cardamom and Vanilla Scented Apple Cake - A wonderful recipe to use wonderful seasonal apples.

  • 185 grams unsalted butter, softened

  • 185 gms (3/4 cup) of caster sugar

  • 2 large eggs

  • 250 grams (2 cups ) of self raising flour

  • 150 mls of milk

  • 1 teaspoon of vanilla extract

  • Seeds of 8 green cardamom pods, ground in a morter and pestle with a

  • teaspoon of sugar

  • 2 large apples

  • Juice of half a lemon

  • icing sugar to sift

Preheat the oven to 180. Grease and line with parchment ( baking paper) a 20cm spring form cake tin. (the Silverwood one is probably best Wink
In a mixing bowl beat together the butter and sugar until pale and creamy. Add in eggs one at a time and beat well after each addition.
Mix through the ground cardamom and sugar, sift in the flour, and mix well. Add the milk and vanilla together and stir until smooth.
Spoon the mixture into the cake tin and level. Peel core and slice the apples, and sprinkle with the lemon juice. Arrange the slices in a circular pattern on top of the cake pressing each slice slightly into the cake batter.

Bake for 1 hour or until a skewer inserted comes out clean.
Cool the cake in the tin for at least 10 minutes, then take out to cool on a rack. Dust with icing sugar to serve.

Chocolate Mousse Cake

NigellacakeThis Easter I just thought it was a good time to make this scrummy cake by Nigella Lawson. No flour so good for gluten-free too!

 

300g best dark chocolate

50g best milk chocolate

175g unsalted butter

8 large eggs separated

100g light muscovado sugar

100g caster sugar

1 tbsp vanilla extract

pinch of salt

 

Oven 180, gas4

 

Line the inside of a sprongform tin with foil ensuring it smoothly covers the whole inside.

 

Melt the chocolate and butter and let it cool.

In another bowl, beat the egg yolks and sugars until thick, pale and creamy.

Add the vanilla and salt and melted chocolate mix.

 

Whisk the egg whites until soft peaks. Add a dollop to the chocolate mix and beat it in, then gently fold in the remaining egg whites.

 

Pour the batter into the springform. Put the springform into a deep roasting tin and add hot water to a level of 2½ cm to make a bain-marie.

Cook for 50min – hour. The insides should be damp and moussey, but the sides should be cooked and dry.

 

Cool completely. Gently peel the foil away from the sides – be slow and careful.

Dust with icing sugar and serve with crème fraiche and raspberries.

We had such a fantastic time cooking for the website photos!

Our first day was a glorious June morning and Sharon Annat was so patient with us and took some stunning pictures.The sun shone afterwards and we were able to have a BBQ, eat the food we'd made and generally chill out.

YummmmHere's Sharon's lovely daughter Millie gazing at a yummy crispie cake made by Maggie especially for the day.

Having had a day of cooking and baking for the food photo shots, we then were in a lucky position to have Sharon's husband along! Not only is he a dab hand on a barbecue, he's the crowned BBQ King of Great Britain - how cool is that?

Andy Annat runs his own Barbecue Catering business, Blazing Barbecues, from Melmerby, North Yorkshire, and regularly caters successful events for private and corporate parties. He learned his barbecuing craft at family BBQ's and with his formidable knowledge of meat secured himself first place, preparing and cooking two dishes in 90 minutes. Andy cooked the National BBQ's classic Chicken Ciabatta and his own dish consisting of a rack of lamb with sweet potato chips, grilled vegetables, mint mojo and a redcurrant and port sauce.
He did, however, agree to cook our home-made sausages and burgers for us - not quite the standard of food he's used to!
