



Roasting your squash in the oven before adding to a recipe adds a new dimension.
I learnt this a while ago and it still holds true 
Cut the squash, peel and deseed. Chop into chunks and spread into roasting tin. Drizzle on olive oil, salt, pepper and any other spices you fancy.... coriander and cumin work well and even a bit of chilli...
Roast for around 30 minutes in a medium hot oven.
THEN,
add to soups, stews, or eat as a side veg. I puree mine and add to bread mix - it makes a fantastic and hearty loaf of bread. What a difference a roast makes....
